Have a row of 15 names on column A, I have a 6 headers. I want to put a SUM at the end, making a 7th header instead of the 16 row. Can you do that?
I need the grand total in my last column for that row. If that makes it simpler.
OK, so googling says something like they are different fields and so that doesn't work. but I can do a SUM at the end, outside the pivot, and it works, so you would think excel would be smart enough to do something similar with the pivot right?

It sounds like what you want to do is a Calculated Field. While in the pivot table select the pivot table ribbon - Analyze - Fields, Items, Sets - Calculated Field.
